Six days in a cargo hold.

Most exotic mushrooms served in England are cut abroad, chilled, flown, trucked, and traded through a market before a chef ever opens the box. By then the cut face has browned and the scent has gone quiet.

Ours are cut at first light in East Garston and travel by van, not by air. A kitchen in the valley has them before the pans are hot. A kitchen in Oxford or Bray, before lunch. The cut face is still white. The scent is still loud.
